A: Depends on the vegetable! Frozen spinach, for example, is often more nutritious than fresh because its nutrients are "locked in" when the spinach is frozen just hours after it's picked. Fresh spinach leaves, on the other hand, may travel for several days before arriving at your kitchen table, losing precious vitamins and minerals (when exposed to heat and light) along the way.
