Weight Watchers - Plum Meatloaf recipe

Wow this sounds bad but is really good, plums and meatloaf now you can have your dinner and dessert too all on the same plate.

1 Lb. Lean ground beef
1 1/4 C. Salsa
3/4 C. Quick cooking oatmeal
1 Carrot, shredded
2 Plum tomatoes, diced
1/2 C. Coarsley chopped mushrooms

Preheat oven to 350ยบ. Spray a loaf pan with cooking spray. combine all ingredients, shape mixture into a loaf and place in pan, bake until a knife inserted in the center comes out clean and hot- 1 hour 5 minutes. Let stand 5 minutes before slicing

Makes 6 Servings
