Cold Mellon Soup Recipe
This Weight Watchers melon treat is especially a great treat at 1 point per serving.

Serve this cool minty treat as a first course or an after-dinner snack. Pre-cut melon makes preparation a summer's breeze.
Ingredients
* 4 1/2 cup honeydew melon, cubed and chilled
* 1 cup mint leaves, fresh, loosely-packed
* 3 Tbsp fresh lime juice
* 1 tsp ginger root, fresh, grated
* 1/4 cup plain fat-free yogurt
Instructions
* Puree honeydew, mint, lime juice and ginger in a blender until smooth (you may have to do this in batches).
* Serve immediately or transfer to a container and refrigerate up to 2 days. Top each portion with 1 tablespoon of yogurt before serving. Garnish with slivered mint leaves if desired. Yields about 1 cup per serving.
With the weather here in Calgary about to go up into the 30s Celsius this weekend (the 90s for you folks down south) I am really happy to find a cool treat for this hot summer.
