Fish is always a good and healthy alternative to chicken or beef. Here is Snapper (a great tasting fish) in a Spanish sauce.

Sofrito is a classic Spanish seasoning used for many different dishes. We serve it with fresh fish for a light yet flavor-packed meal.
Ingredients
1 sprays cooking spray
1 pound snapper fillet(s), four 4-oz pieces
2 tsp olive oil
1 large onion(s), chopped (about 1 1/2 cups)
1 large green pepper(s), chopped (about 1 cup)
1 small sweet red pepper(s), chopped (about 3/4 cup)
4 medium garlic clove(s), chopped (about 4 Tbsp)
1/4 cup water
1/2 tsp table salt
1/4 tsp black pepper, freshly ground
2 Tbsp parsley, fresh, chopped (for garnish)
Directions
Coat a large nonstick skillet with cooking spray and place over medium-high heat. Sauté snapper until fish flakes easily with a fork, about 3 minutes per side. Remove fish from skillet; set aside and keep warm.
Heat oil in same skillet. Add onion and peppers and cook, stirring and shaking pan, until vegetables are quite soft and browned, about 7 minutes. Add garlic and cook 2 to 3 minutes more.
Add water and scrape bottom of pan with a spoon to release browned bits. Season with salt and pepper and serve over fish; garnish with parsley. Yields 1 fillet and about 1/2 cup of vegetable mixture per serving.
